In 2025, global fucoidan production reached approximately 115 ton, the average price is 335 usd/kg. Fucoidan, also known as fucoidan or fucoidan gum, is a type of water-soluble sulfated heteropolysaccharide extracted from the cell walls and intercellular spaces of brown algae (kelp, wakame, fucus vesiculosus, etc.). Its main chain is composed of α-L-fucose linked by 1→2 or 1→3 glycosidic bonds, with some sites containing sulfate ester groups, acetyl groups, and side chains such as galactose, xylose, and uronic acid. Due to differences in sulfate content and structure, it is divided into many subtypes. The main extraction methods are hot water acid extraction or enzymatic ultrasonic assisted extraction. Purification relies on alcohol precipitation followed by ion exchange gel filtration. Its biological activities cover immunomodulation, anticoagulation, antioxidation, antiviral, and intestinal protection. Its main applications are in food, health products, cosmetics, and biopharmaceuticals.
